Spotlight on Lavender

Why does just about everybody love lavender? Is it the incredible aroma? Is it the relaxing and healing properties? Is it because it's an edible herb? It's all that and so much more!
Among its many properties, lavender is known to be antidepressant, antiseptic, antiviral, bactericide, decongestant, deodorant, diuretic, fungicide, and sedative. Its floral aroma promotes relaxation and is often used in the bedroom to relieve insomnia. It assists in bringing down high blood pressure and relieves muscular pains. Lavender purifies the air and repels insects. It promotes growth of new skin cells, and has a healing effect on burns, acne, psoriasis, and scarring. Lavender is one of the safest essential oils to use with children and the elderly.
Some interesting lavender anecdotes: In ancient times the Egyptians used lavender for perfume and mummification. The power of this seductive scent was used by Cleopatra to seduce Julius Caesar and Mark Antony. Charles VI of France demanded lavender filled pillows wherever he went.

Lavender Whipped Cream
- 1 cup heavy cream
- 3 tablespoons fresh lavender flowers OR 1 tablespoon dried lavender flowers
- 1 tablespoon sugar
- fresh lavender for garnish
Combine cream and lavender in small mixer bowl. Cover and refrigerate for 8 - 24 hours while cream absorbs the lavender flavor. Strain cream and discard lavender. Beat cream until almost stiff, gradually add sugar and continue beating until consistency is stiff. Sprinkle lavender flowers over the cream before serving with fresh fruit or pound cake. Yield: 2 cups whipped cream.
